About The Dingle

Dingle Distillery in County Kerry is one of the first of Ireland's new independent distilleries, making single malt and single pot still whiskey, known for small batches and seasonal releases.

Country

Region
County Kerry
Founded
2012

The Dingle Distillery stands on the edge of the town of Dingle in County Kerry, in the far southwest of Ireland. It began distilling in 2012, when there were very few whiskey distilleries in the country, and was one of the first independent ones of the modern Irish revival. The late Oliver Hughes, of the Porterhouse brewing group, was among its founders.

The distillery uses copper pot stills and makes both single malt and single pot still whiskey, the traditional Irish style using malted and unmalted barley. It also makes gin and vodka. Its whiskies are matured in a variety of casks, with bourbon, sherry and port casks common.

Alongside the Dingle Single Malt and Single Pot Still Whiskey, the distillery is known for limited releases named after Irish seasonal festivals and the turning points of the year: Samhain, Lá le Bríde, Bealtaine and Lúnasa, plus the solstice and equinox editions Grianstad an Gheimhridh, Grianstad an tSamhraidh and Cónocht an Earraigh. Older bottlings, such as a 10 year old single malt, are appearing as stocks mature.

Most Dingle whiskey is bottled by the distillery. Single casks selected for particular retailers, such as a Palo Cortado cask for The Whisky Exchange, turn up as well, but independent bottlings are not common.
