About Dingle

Independent distillery in Dingle, County Kerry, among the first of Ireland's new wave, known for triple-distilled single malt and pot still whiskey and its seasonal Wheel of the Year releases.

Region
County Kerry
Founded
2012

Dingle Distillery stands on the edge of the town of Dingle on the Kerry coast in the west of Ireland. It was founded in 2012 by Oliver Hughes, a pioneer of Irish craft brewing, and was one of the first new independent distilleries in Ireland in a generation. Its first whiskey was released in 2016. Besides whiskey, it also makes gin and vodka.

The distillery makes both single malt and single pot still whiskey, distilled three times in copper pot stills in the Irish manner. Early releases came in small batches from bourbon, sherry and port casks, and the house style is fruity and fairly rich for young whiskey, with the cask playing a large part.

The core range includes the Dingle Single Malt Whiskey and the Single Pot Still Whiskey, with older releases such as the Single Malt 10 Years now appearing as the stocks mature. Cask-led editions, such as the 11 Year Old from Pedro Ximenez casks, and occasional shop exclusives also turn up.

Collectors follow the Wheel of the Year series, named after the festivals of the old Celtic calendar: Samhain, Lá le Bríde, Bealtaine, Lunasa, Cónocht an Earraigh and the solstice releases Grianstad an Gheimhridh and Grianstad an tSamhraidh. Each is a limited release with its own cask selection.
