West Cork Distillers is based in Skibbereen in County Cork, in the south-west of Ireland. It was founded in 2003 by a small group of local men and has grown into one of the larger independent distilleries in the country.
The distillery is known for experimenting with wood. Its Glengarriff series uses casks charred with local materials, such as the Peat Charred Cask Finish and the Bog Oak bottling, where the wood is charred using bog oak rather than simply toasted. This gives a smoky or earthy note without using peated malt in the usual way.
The main range a buyer meets is the West Cork single malt, sold young as a 5 Year Old Bourbon Cask and with Port, Rum and Virgin Oak cask finishes, and older as a 10 Year Old and 12 Year Old bottlings finished in Port, Rum or Sherry casks. There is also an Irish Stout Cask blend, and the distillery makes whiskey for other brands, including The Pogues Irish Single Malt.
Most of what reaches buyers is bottled by the distillery itself rather than by independent bottlers.
