Thy Whisky comes from Gyrup farm in Thy, the windswept northwest corner of Jutland in Denmark. The whisky is closely tied to the farm: the barley, rye and spelt are grown organically on its own fields.
The spirit has a strong farm and grain character. A signature is "Bøg" (beech), malt smoked over beech wood instead of peat, which gives a gentler, woody smoke. Spelt and rye give the grain whiskies a spicy, bready side.
Releases are usually numbered, such as No.22 Bog / PX Cask and No.23 Hawboen, next to the Thy Single Malt, Thy Bog and the Spelt Rye range. Independent bottlers also pick casks, including Berry Bros. & Rudd and other single cask selections.
