Bimber was founded in 2015 in Park Royal, West London, by Dariusz Plazewski. The name comes from the Polish word for homemade spirit, a nod to the family distilling tradition behind the project. Its first single malt whisky was released in 2019, making it one of the newer names in English whisky.
The distillery makes its spirit on site with a hands-on approach, including wooden washbacks and long fermentations, and fills a range of casks such as ex-bourbon, sherry and virgin oak. The style tends to be fruity and rich, with the cask playing a clear part given the young age of most releases.
Much of Bimber's output appears as single casks, often bottled at cask strength for shops, festivals and countries, such as the releases for Selfridges, the Southport Whisky Festival and the Netherlands. Regular ranges include Single Cask and Small Batch, along with themed series such as The Four Elements, Spirit of the Underground and Shoulders of Giants. Apogee XII is an older 12 year old release, and our catalogue also links some bottlings with The English distillery.

About whiskies
Whisky (or whiskey) is a distilled alcoholic beverage made from fermented grain mash. Various grains are used including barley, corn, rye, and wheat. Whisky is typically aged in wooden casks, which gives it its distinctive color and complex flavor profile.
Each bottling represents a unique expression with specific characteristics like age, cask type, and alcohol strength.
