Redbreast gaat terug tot 1912, toen de wijn- en sterke drankhandelaar Gilbey’s onder deze naam whisky van de Jameson-distilleerderij in Dublin begon te bottelen. Tegenwoordig is het eigendom van Irish Distillers, onderdeel van Pernod Ricard, en wordt het gedistilleerd en gebotteld bij de Midleton Distillery in County Cork.
Redbreast is een single pot still-whisky, een traditionele Ierse stijl gemaakt van een beslag van gemoute en ongemoute gerst en driemaal gedistilleerd in koperen pot stills. De ongemoute gerst zorgt voor een romige, olieachtige textuur en een vleugje kruiden. De rijping in voormalige bourbon- en Oloroso-sherryvaten zorgt voor de tonen van gedroogd fruit, noten en kerstcake waar het merk bekend om staat.
Het basisassortiment begint met de 12 jaar oude, waarbij de 12 Years Cask Strength in kleine series wordt uitgebracht, gevolgd door de 18 Years en de 21 Year Old. Speciale edities verkennen verschillende vaten, zoals de Lustau Edition die is gefinisht in sherryvaten, de Cuatro Barriles Edition, de Moscatel Wine Cask Edition en de Missouri Oak Edition.
Verzamelaars vinden er ook zeldzame single casks en exclusieve uitgaven voor winkels, waaronder oudere bottelingen uit sherry- en portvaten voor The Whisky Exchange.
