Octomore wordt gemaakt in de Bruichladdich-distilleerderij aan de oevers van Loch Indaal op Islay. De naam is afgeleid van de Octomore-boerderij boven het dorpje Port Charlotte, waar in de 19e eeuw ooit een kleine distilleerderij stond. De eerste Octomore kwam in 2008 op de markt en sindsdien vindt er elk jaar botteling plaats.
Wat Octomore zo bijzonder maakt, is de turf. De gerst wordt gemout tot fenolgehaltes die ver boven die van de meeste Islay-whisky’s liggen, vaak ruim boven de 100 delen per miljoen en in sommige edities zelfs boven de 300. Toch komt de whisky uit de hoge distilleerketels van Bruichladdich vrij zuiver en fruitig naar voren, waardoor de rook meestal samengaat met zoetheid, graan en zeelucht, in plaats van die smaken te overheersen.
De releases volgen een nummeringssysteem. Het eerste getal is de editie (bijvoorbeeld 11 of 14), en de decimaal geeft de stijl aan: .1 is meestal Schotse gerst in Amerikaans eiken, .2 heeft invloed van wijn- of andere vaten, .3 gebruikt gerst geteeld op Islay, en .4 is gerijpt in nieuw eiken. Onze catalogus bevat veel van deze whisky’s, zoals Octomore 12.3 Islay Barley, 11.1 Dialogos, 04.2 Comus en 08.4 Virgin Oak. De meeste zijn jong, zo’n vijf jaar oud, en ondergaan de botteling met een hoog alcoholpercentage.
Naast de jaarlijkse edities zijn er af en toe oudere of speciale bottelingen, zoals de 10 Year Old-edities, The Impossible Equation en Fèis Ìle-festivalreleases zoals Event Horizon. Octomore wordt gebotteld door Bruichladdich op Islay, zonder koudefiltratie of toegevoegde kleurstoffen, en de distilleerderij is eigendom van Rémy Cointreau.
