Balcones was founded in Waco, Texas, in 2008 and started distilling the following year in a small space under a bridge. It grew quickly and in 2016 moved into a much larger distillery in downtown Waco.
The distillery made its name with whiskies that do not follow Kentucky or Scottish templates. Baby Blue and True Blue are made from roasted blue corn, Brimstone is corn whisky smoked with Texas scrub oak, and the Texas Single Malt is made from malted barley. The hot Texas climate pushes maturation hard, so the whiskies take a lot from the wood in a short time.
Buyers will find the corn whiskies (Baby Blue, True Blue 100 Proof and True Blue Cask Strength), Brimstone, the Texas Single Malt and Mirador, a Texas Rye, a Pot Still Bourbon and anniversary releases such as the Texas High Rye Bourbon and the Brujeria sherry finished single malt. Balcones also makes a Texas rum. Nearly everything is bottled by the distillery itself.
