Sullivans Cove is made by Tasmania Distillery, founded in 1994 and named after the cove on the Hobart waterfront where the city began. The distillery later moved to Cambridge, just outside Hobart. It was one of the early names in the modern Tasmanian whisky revival.
The whisky is a single malt made from Tasmanian barley. Much of it is released as single casks, with the cask number printed on the label, using codes such as TD and HH. Batches are small, so each release differs a little from the last.
The ranges follow the cask type. American Oak Cask is matured in ex-bourbon barrels and is lighter and fruitier, while French Oak Cask has spent its time in casks that held Australian fortified wine such as tawny or apera, giving a richer, darker style. Double Cask is a vatting of both. Older releases such as the 16 Year Old French Oak and 17 Year Old American Oak appear in very limited numbers.
The brand drew wide attention in 2014, when a French Oak single cask was named World's Best Single Malt at the World Whiskies Awards. Since then its bottles have been in strong demand and prices are high for an Australian whisky.
