The Irishman is a brand created by Bernard and Rosemary Walsh, whose company Walsh Whiskey is based in County Carlow in the south east of Ireland. The company also produces Writers' Tears.
Walsh Whiskey built a distillery at Royal Oak in Carlow together with an Italian partner, but the two later separated and the distillery stayed with the partner. The Irishman whiskeys have largely been made from spirit sourced from other Irish distilleries and then blended, matured further or finished and bottled under the Walsh name.
The Founder's Reserve combines single malt and single pot still whiskey. The Irishman Single Malt is the core malt, with aged expressions such as the 12 and 17 Year Old and single sherry casks above it. A Cask Strength edition appears in annual releases, and cask finishes such as Marsala and Caribbean rum add variety. Harvest is another blend of pot still and malt.
