Aultmore was built in 1896 by Alexander Edward on high, open ground between Keith and Buckie. It has been part of the Dewar's business for most of its life and today belongs to John Dewar & Sons, owned by Bacardi.
The distillery draws its water from springs on the Foggie Moss, an area of peat and heather above the site, and runs two pairs of stills. The spirit is unpeated and light, with a clean, grassy and orchard-fruit character that made it a valued component of the Dewar's blends, which still take most of the output.
Official single malt was rare for years. Since 2014 Dewar's has bottled it in the Last Great Malts series, most often met as the 12 Year Old, with older expressions such as the 20 and 21 Year Old and occasional limited editions.
Aultmore is also widely bottled by independents. Signatory Vintage, Gordon & MacPhail, Douglas Laing (including its Provenance range), Duncan Taylor, Hunter Laing, Berry Bros. & Rudd and That Boutique-y Whisky Company all release single casks and small batches, which give a chance to taste it at different ages and from different cask types.
