Cardrona Distillery sits in the Cardrona Valley, between Wanaka and Queenstown in Central Otago, on New Zealand's South Island. It was founded by Desiree Whitaker and began distilling in 2015. Alongside whisky it also makes gin and vodka.
The distillery produces single malt from malted barley on a pair of copper pot stills, using water from the surrounding mountains. The cool, dry inland climate of Central Otago shapes how the spirit matures in cask. The team has been open about releasing the whisky as it grows up, so buyers can follow it from young spirit to older single malt.
The bird-themed ranges mark these stages. The Just Hatched was the early, young release. Growing Wings bottlings are around five years old and come from a variety of casks, including oloroso sherry, sherry and bourbon solera, ex-bourbon casks from Old Forester and Breckenridge, and local Central Otago Pinot Noir casks. Full Flight is the older, more mature range, including single cask sherry and bourbon releases, and there are special bottlings such as The Falcon.
Many Cardrona releases are bottled at high or cask strength in small numbers, and single cask editions carry their cask number on the label. Almost all bottles come from the distillery itself rather than independent bottlers.
