De single malts van Paul John worden in Goa, aan de westkust van India, gemaakt door John Distilleries, het bedrijf dat is opgericht door Paul P. John. De distilleerderij staat vooral bekend om de sterke drank die in India zelf wordt verkocht, maar de single malts hebben ook in het buitenland een trouwe aanhang gekregen.
De whisky wordt gedistilleerd in koperen pot stills, grotendeels van Indiase gerst. Voor de geturfde whisky’s wordt geturfde gerst ingekocht. Door het hete, vochtige klimaat van Goa geven de vaten snel smaak af, dus worden de whisky’s meestal jong gebotteld, met veel eikenhout, fruit en kruiden voor hun leeftijd.
Het officiële assortiment bestaat onder andere uit Bold, een geturfde malt, en de Select Cask-bottelingen: Classic Select Cask, Peated Select Cask en Pedro Ximénez Select Cask. Er zijn ook single casks, zowel geturfd als ongeturfd, en seizoensgebonden uitgaven zoals de Christmas Edition.
Paul John wordt ook gebotteld door onafhankelijke bottelaars, waaronder That Boutique-y Whisky Company, Single Cask Nation en Berry Bros. & Rudd, vaak als jonge single casks.
