Cotswolds Distillery is near Stourton in the north Cotswolds, in England (not Scotland, as our data says). It was founded by Daniel Szor and began distilling in 2014, releasing its first single malt a few years later. It also makes gin.
The distillery works with barley grown in the Cotswolds and floor malted, and much of its spirit is matured in wine casks that have been shaved, toasted and recharred, alongside bourbon and sherry casks. The result is a fruity, rounded malt that is ready to drink fairly young.
The core is the Single Malt, often labelled Signature, joined by the Sherry Cask and Peated Cask bottlings. The Harvest Series, with releases such as Amber Meadow and Golden Wold, focuses on barley from single farms. There are also single cask releases, such as Oloroso sherry butts and a ruby port cask, and special bottlings like Highgrove Evergreen and a Magdalen College single malt.
Independent bottlings exist too, from That Boutique-y Whisky Company, Berry Bros. & Rudd and The Heart Cut, usually single casks of a few years old.
