Founded

Hinch Distillery is in Ballynahinch, County Down, in Northern Ireland. It was founded by Dr Terry Cross, and the distillery buildings opened around 2020. Hinch whiskey was on sale before then, made from whiskey sourced from other Irish distilleries.

The range mixes sourced whiskey with spirit from the distillery's own stills. Older age statements, such as the 14 Years Old Pedro Ximenez and the 15 Years Old Palo Cortado and Oloroso cask finishes, cannot come from Hinch's own production and are sourced Irish whiskey finished in sherry casks.

Other lines a buyer meets include the Small Batch Bourbon Cask, the Peated Small Batch, the Craft and Imperial Stout finish, Single Pot Still, and single malts aged in combinations of bourbon, Madeira and oloroso casks. The style leans towards approachable, cask-led Irish whiskey.
