El Dorado is a rum, not a whisky, and it comes from Guyana. It is made by Demerara Distillers Limited at the Diamond distillery on the banks of the Demerara River. Over the years the distillery brought together the stills of many old Guyanese sugar estates.
These heritage stills give El Dorado its character. They include the double wooden pot still from Port Mourant, the single wooden pot still from Versailles, the wooden Coffey still from Enmore and the column stills at Diamond and from Uitvlugt. Each makes a different style of rum, from rich and heavy to light, and blending them is central to the house style.
The aged range runs from 3 Years Old through 8, 12, 15 and 21 Years Old. These blends are rich and sweet, with notes of brown sugar, dried fruit and wood.
For enthusiasts there are releases that show single stills, such as the Single Still Port Mourant and Versailles bottlings. Special Cask Finish releases from Versailles, Uitvlugt and Enmore were finished in red wine or Sauternes casks. The Last Casks bottlings feature old rums from stills like Diamond Coffey and Uitvlugt.
