Cardrona Distillery sits in the Cardrona Valley in Central Otago, on New Zealand's South Island, between Wanaka and Queenstown. It was founded by Desiree Whitaker and began distilling in the mid 2010s, making it one of the newer whisky producers in the country.
The distillery makes single malt from malted barley in copper pot stills, alongside gin and other spirits. Its whisky is matured on site in a mountain climate of cold winters and warm summers, and the team has focused on sherry and bourbon casks, with occasional local touches such as Central Otago Pinot Noir casks.
The releases follow the life of a bird. The Cardrona Just Hatched was the first, young whisky, followed by Growing Wings at around five years old and Full Flight as the older expression. Within these ranges buyers will find single cask bottlings, solera vattings of sherry and bourbon casks, and finishes in casks from American distillers such as Old Forester and Breckenridge. The Falcon is a further release in the same family.
Cardrona whisky is bottled by the distillery itself, often at high strength.
