InchDairnie is a young distillery near Glenrothes in Fife, in the Scottish Lowlands. It was founded by Ian Palmer, an experienced distiller, and started producing in the mid 2010s with a focus on experimenting with grain, fermentation and distillation.
The distillery is known for equipment rarely seen in Scotch whisky, including a mash filter in place of a traditional mash tun and a Lomond-style still alongside its pot stills. This lets it work with recipes beyond malted barley, most notably malted rye.
RyeLaw is its best known release: a single grain whisky made from malted rye and malted barley, released as vintages such as 2017 and 2018. KinGlassie is a peated whisky linked to the distillery. Finglassie is the name used for the distillery's peated spirit when it appears at independent bottlers.
Those independent bottlings are already easy to find, often as young single casks. James Eadie, The Vintage Malt Whisky Company (with its Cooper's Choice series, for example Finglassie Lowland Smoke) and Keeble Cask Company have all bottled it, with ages from about four to eight years.
