Daftmill is a farm distillery in Fife, in the Scottish Lowlands, set up by the Cuthbert family in converted farm buildings and licensed in 2005. Distilling fits around the work of the farm, so production is small.
The barley comes from the family's own fields, which gives Daftmill a true single-estate character. The distillery has one wash still and one spirit still, and the family chose to wait many years before releasing any whisky: the first bottlings came only in 2018, from spirit distilled in 2006.
The style is a light, fruity Lowland malt, mostly matured in ex-bourbon casks with some sherry casks. Official releases come as the Summer Batch Release and Winter Batch Release, each from a single vintage such as 2006, 2009, 2010 or 2011, along with single casks, limited editions and retailer exclusives like the 2007 sherry cask for The Whisky Exchange. The 15 Year Old 2006 Fife Strength (2022) is one of the stronger releases.
Almost all Daftmill is bottled by the distillery itself, and independent bottlings are rare, which makes the official releases the main way to find it.
