FEW Spirits was founded in 2011 by Paul Hletko in Evanston, Illinois, just north of Chicago. Evanston was long a dry town and home of the temperance movement, and the FEW name is widely taken as a nod to temperance leader Frances Elizabeth Willard.

The distillery works grain to glass, mashing, fermenting and distilling its own spirit on site rather than buying in whiskey. Its core whiskeys are a high-rye style bourbon, a rye whiskey and a single malt. FEW Single Malt Triple Smoke is made with malt smoked over three different fuels, giving a layered smoky profile.

FEW is also known for limited editions made with rock bands, which buyers will see as Alice in Chains Bourbon, the Smashing Pumpkins Straight Bourbon Whiskey and Flaming Lips Brainville Rye Whiskey. Other releases include Bourbon Cold Cut and Immortal Rye, alongside the standard FEW Rye Whiskey.
