Dalwhinnie distillery stands in the village of the same name, high on the Drumochter Pass in the central Highlands. It was built in the late 1890s and is now owned by Diageo. Its height and cold climate are a large part of the brand's identity.
The spirit is made mostly from unpeated malt and is condensed in traditional worm tubs outside the stillhouse. The result is a smooth, sweet malt with notes of honey, heather and a little smoke, which makes it a common first single malt for many drinkers.
The core bottle is the 15 Year Old, which has been around for decades. Older 15 Year Old bottlings from the 1980s and 1990s also appear on the secondary market. The Distillers Edition is finished in oloroso sherry casks and carries both a distillation and bottling year. Winter's Gold is designed to be served from the freezer, and the House Stark Winter's Frost bottling was part of Diageo's Game of Thrones series.
For collectors, Diageo has released older Dalwhinnie in its annual Special Releases, including 25 Year Old and 30 Year Old bottlings. Independent bottlings of Dalwhinnie are rare, so nearly everything a buyer meets comes from the owner.
