Filey Bay whisky is made at the Spirit of Yorkshire Distillery at Hunmanby, a few miles inland from Filey Bay on the North Yorkshire coast. The distillery was set up in 2016 by farmer Tom Mellor and David Thompson, who also runs the Wold Top Brewery, and its first single malt was released in 2019.
The distillery works on a field-to-bottle basis: the barley is grown on the family farm and brewed into wash nearby, giving the team control over every step. The spirit is known for a light, fruity, malty style, and most releases are matured in ex-bourbon casks, with sherry and other casks used for finishing and special editions.
The core bottling is the Flagship Single Malt. Around it sit a steady run of numbered and limited releases, such as Moscatel Finish, Double Oak, IPA Cask Finish, Porter Cask Special Release, the Sherry Cask Reserve series and a Peated batch. Some early casks appear under the distillery's own name, Spirit of Yorkshire.
As a young English distillery it is mostly bottled officially, but single casks have also appeared from independent bottlers such as Adelphi, Berry Bros. & Rudd and Decadent Drinks.
