Domaine des Hautes Glaces is a farm distillery in the Trièves area of the Isère, in the French Alps. It was founded around 2009 by Frédéric Revol and Jérémy Bricka with the idea of making whisky the way a wine estate makes wine: from its own land, its own harvest and its own place. The company has been owned by Rémy Cointreau since 2015.
The grain is the starting point here. Barley, rye and older grains such as spelt are grown organically on and around the estate, and much of the work goes into showing how grain, field and vintage change the spirit. The result is a style that tends to be grain-forward and characterful rather than heavily wood-driven.
The Moissons range (French for harvests) is the main line, with a Single Malt and a Single Rye. Alongside it are bottlings such as Indigène single malt and a Version Française single malt.
The Epistémè releases are small experimental bottlings, often in sets that compare one variable at a time, such as the malted spelt S12U24 or the shape-coded R18P23 and RØØF24 single rye releases (Square, Round, Triangle, Star, Circle). They are made in small quantities and are aimed at curious drinkers who enjoy tasting side by side.
