About Milk & Honey

Tel Aviv
Founded
2012

Milk & Honey was set up in Tel Aviv as one of the first whisky distilleries in Israel. Its name comes from the biblical description of the land, and its whisky is made and matured locally.

The climate shapes the spirit. Long, hot summers make the casks work fast, so the whisky takes on wood character in a few years that would take much longer in Scotland, and a good share is lost to evaporation along the way. Most bottlings are therefore young, often three to five years old.

The Apex series shows what different casks and places do to the spirit. Bottlings include Apex Dead Sea, matured near the lowest point on earth, alongside Apex finishes in pomegranate wine, white wine and rum casks. The Elements series, such as the Red Wine Cask, explores single cask types more simply.

The distillery also releases single casks, many made exclusively for retailers and markets, such as ex-Islay casks for The Whisky Exchange, a Benelux edition and fortified red wine casks. These single cask bottlings vary from cask to cask, so it is worth reading the label closely.
