Starward was founded in Melbourne in 2007 by David Vitale. It began in a former aircraft hangar at Essendon Fields and later moved to a larger site in Port Melbourne. It has become one of the best-known names in Australian whisky.
The distillery works with Australian malted barley and leans heavily on Australian wine barrels, especially casks that held red wine. Melbourne's changeable climate, with big swings in temperature, helps the spirit take on cask character fairly quickly. The result is usually fruity, approachable whisky without long age statements.
The core bottlings a buyer meets most often are Nova, matured in red wine barrels, and Solera, matured in casks that held Australian fortified wine. Two-Fold is a double grain whisky made from wheat and malted barley, Left-Field is aimed at casual drinking and mixing, and Fortis is a higher-strength bottling. Limited and experimental releases include Unexpeated, Dolce, the Projects series, the 10th Anniversary bottling and various single-cask finishes.
Alongside the official range, Starward is also bottled by independent bottlers such as That Boutique-y Whisky Company, Berry Bros. & Rudd and The Heart Cut.
