Paul John single malts are made in Goa on India's west coast by John Distilleries, the company founded by Paul P. John. The distillery is better known for spirits sold within India, but its single malts have found a following abroad.
The spirit is distilled in copper pot stills, largely from Indian barley. For the peated whiskies, peated barley is brought in. Goa's hot, humid climate makes the casks give up flavour quickly, so the whiskies are usually bottled young, with a lot of oak, fruit and spice for their age.
The official ranges include Bold, a peated malt, and the Select Cask bottlings: Classic Select Cask, Peated Select Cask and Pedro Ximénez Select Cask. There are also single casks, both peated and unpeated, and seasonal releases such as the Christmas Edition.
Paul John is also bottled by independent bottlers, including That Boutique-y Whisky Company, Single Cask Nation and Berry Bros. & Rudd, often as young single casks.
